Baguette Breakfast Boat [Video Tutorial]

Ingredients:
2 medium baguette
1 small onion (I used yellow)
2 large cherry tomatos
1 handful shimeji mushrooms
parsley
2 large eggs
2 cheese slices
salt & pepper
Instructions:
Preheat oven to 180 degree celsius (350 fahrenheit)
Cut a V shape down the baguette to create hole for egg mixture to sit in.
Wash and cut ingredients according to desired size.
In a medium sized bowl, add in onions, tomato, mushrooms, parsley, egg and mix well.
Pour mixture into prepared baguette boat.
Bake for 20 minutes.
After 20 minutes, add cheese slices and bake for additional 5 minutes. (Total baking time: 25 minutes)
Garnish with more parsley, salt & pepper.
